After several years in finance in both New York and London, Santiago decided to pursue his real passion -food- by trying to bring the best he thinks his native Mexico has to offer to the US in terms of gastronomy. Santiago learned early on the key principles of service and hospitality, and his tenure as investment banker provided him with a solid foundation for numbers and attention to detail.As partner from its inception to it finally becoming a reality, he has been critical in bringing Cosme to life, launching ATLA, as well as managing the expansion efforts.
